Position the chopped chocolate inside a heatproof bowl. Set the bowl about a pot of simmering water, ensuring the bottom with the bowl doesn’t contact the water. Stir the chocolate regularly right until it melts, then use a candy thermometer to check when it reaches 45-48C (113-118°File)
